Leslie Carrero is a recent graduate from Keiser University with a Bachelors of Science in Dietetics and Nutrition and a graduate from Palm Beach Community College in Lake Worth, Fl with an Associates Degree in Dietetics and Nutrition and has been a DTR for more than 25 years in Long Term Care as a Clinical Diet Tech and a Food Service Director. She decided that preventative nutrition was important and returned to school to expand her knowledge and change her career pathway. During one of her supervised practice rotations at Osceola Council on Aging she was able to work with the Meals on Wheels program and found a passion for those with food insecurity and spent several days a week at the free clinic where she used her counseling skills for diabetic educations and presentations to the congregate dining participants. During this time she participated in Legislative Day with her class and was able to speak with our State Representative Neil Combee on the importance of not cutting back on funding for the Elderly Programs. Leslie also enjoyed the challenge of her clinical rotation in the hospital and is setting her sights on a position in the Orlando area after taking her RD exam. Leslie participated as a student volunteer at the Florida Academy of Nutrition and Dietetics Annual Symposium this past July and participated in Florida Nutritionist in Aging Program Network Workshop. She currently is serving on the fund raising committee for FAND. Leslie continues to seek volunteer opportunities such as Feeding Children Everywhere making boxed lunches for Orlando Cares HOPE for Puerto Rico following Hurricane Maria. She is a member of Toastmasters and works part time in food and beverage at the Walt Disney World company.
